Interview with Donald Link Q. Your last cookbook, Real Cajun, was a celebration of the culture in which you grew up. With Down South, what made you decide to get out of your comfort zone, so to speak? Growing up I had a strong influence from my Mother's father who grew up in Alabama. When it comes right down to it, I probably ate more Southern-style food growing up than Cajun food. We didn't take a lot of trips anywhere to speak of growing up except for to the Redneck Riviera. My aunt Cynthia had a house (trailer actually) on the waterfront in Gulf Shores, Alabama, so we would eat with her and at other funky restaurants on the Gulf Coast. I've also met a lot of other Southern chefs and have been able to see very distinct subcultures of southern food. Q. I know you routinely go to France and Italy, where you rent houses, shop the markets, and cook. And before you opened your fabulous new seafood restaurant Pêche, you and your crew went to Spain and to Uruguay for inspiration. Tell us about how those experiences translate into the cooking you do in your restaurants and books. My favorite thing to do when I travel anywhere is to cook in those locations with their regional ingredients. People think I'm crazy to cook on vacation but I tell them that cooking is why I got into this business in the first place. It is actually one of my favorite things to do. There is no way to replicate the cooking from my house or even my restaurant. The ingredients, terroir, dairy, meats, etc., are all unique in different parts of the world with very unique flavors. Taste the butter in France or the meat in Uruguay and you'll immediately see what I mean. Q. You also travel a little closer to home--as in the places showcased in the new book. Tell us about the trips and the influences that inspired Down South. The Southern coast was probably the most inspiring of the trip. It's very difficult to find the old-school places that I remember growing up, but there are still a few. Most of the area has been taken over by some sort of crab-trap, generic-named restaurant serving frozen crab from Alaska. Just like the food overseas, the real finds on the Gulf Coast are the markets and the fresh seafood and making my own food with those ingredients. Burris Farm Market and Joe Patti's are great examples of this. Q. The subtitle of the new book references pork, shrimp, and bourbon, but there is clearly a whole lot more inside. What made you decided to pull those three ingredients out? When I first set out on this book, it occurred to me that most of my forays through the South involved some sort of pork and almost always ended up with bourbon, and on a few occasions the day started with bourbon. The shrimp part came after the great Gulf Coast trip. Whereas a lot of Southerners hunt religiously, my dad and I did a lot of fishing and shrimping. Q. This is a gorgeous book with stunning photographs. Why did you feel like it was important to shoot each chapter on location rather than in a studio? I've never been comfortable with studio shots. I don't feel it really represents the soul of the food I cook. Shooting on location with natural light always brings about a real and authentic sense of place to the food. The book is really telling a story about food. I think it would be hard to write about one's time in Spain if you've never been there. I feel the same about food and the photos that go with it. Q. It really feels like "Down South," to borrow your title, is really at the forefront (or maybe it's the engine) of the current national food scene--a trend driven in large part by remarkable chefs such as yourself. One of my favorite new restaurants in Manhattan, Maysville, is named for the town in Kentucky where bourbon was invented, and it has some of the best little grits cakes I've ever put in my mouth. The chef isn't Southern but his influence clearly is. First, do you agree that Southern cooking has moved to the front of the culinary pack? And if so, why do you think that is? For a long time, I think Southern food was considered a type of peasant fattening food. I think chefs now are seeing it's not all chitlins and cornbread. Southern food is, in my opinion, the most distinct food culture the United States has. It has a real history and a solid technique. I find the real trend going on right now is what is considered real. Early in my career at Herbsaint, I had moved back from a three-year stint cooking French California food in San Francisco and was hell bent on doing the same in New Orleans. I felt like the food I grew up with would never be received in an upscale dining situation. Then I came around and realized that cooking Southern and Cajun style was my God-given birthright, and there was no reason that I shouldn't let that come to the forefront of my cooking style.

I ordered this cookbook because I am a HUGE fan of Cochon, Herbsaint and Pesche in New Orleans. Also b/c when interviewed in Food and Wine Magazine Link said that he carries a small knife in the glove box in his car so he can taste boudin sausage wherever he happens to be driving through Louisiana. I was not disappointed by the cookbook. First off, it is gorgeously photographed, and each section and recipe has a forward written by Link which is very personable and accessible. The recipes are not crazy ones that you will never be able to cook - they contain readily available ingredients (especially if you live in the South) Everything I have tried so far is delicious. Am SO glad for his Barbecue Shrimp recipe - been trying to work this out on my own for years and many failed internet recipes this is by far the best!

I loved reading this book! So many memories rushed forward of family meals - crowder and purple hull peas, shrimp and catfish, fresh vegetables, fresh meat, and real desserts (none of the store bought junk in supermarkets today). I remember the sweet smell of bourbon on my dad after the home-from-work cocktail. The recipes are updated but remain true to southern traditions. The stories are obviously heartfelt and the feelings expressed genuine. What a great combination. Not from the South? Y’all come visit for a spell!!

Bought this because his previous book (Real Cajun) is the best cajun cookbook bar none. Oh yeah it won a James Beard award for cookbook of the year. This book will more than likely follow on the heals of its predesessor. The care and the craft with which this book was written is evident on every page.I guess it‘s obvious i enjoyed this book. For me if there was only one recipe in the book, his recipe for banana pudding with nilla wafers justifies the cost of the book. This dessert was a comfort food from my youth that my new snobby tastebuds could no longer eat. My kitchen does not suffer boxed or instant "foods". It took me back to simpler times.Strange what a simple recipe can do.

I bought this book because I have Donald Link's other cookbook, "Real Cajun" and really enjoyed it. I also looked at what was available in the preview and looked forward to this book being it's equal. For me, it fell a little short. Don't get me wrong, there are a number of good recipes in this book that I look forward to trying them, but there are more recipes that I would pass on completely. I also thought that the background info and stories weren't quite as interesting. So it's good, but not great in my mind.

Good cookbook.

It was a gift for my son who worked at Cuchon in New Orleans. He really wanted the book.

Haraway's goal- to find ways of "making oddkin," refusing to take a technological, lazy optimist view of the future nor subscribe to nihilist futilism at what has already occurred, suggests we find ways to reach out in all the myriad creative, intersectional approaches we can muster.The first half of the book is very dense, where Haraway lays out how she intends to connect her SF practices with attention to other "critters" in the world as the Sixth Great Extinction is already steam-rolling species diversity, habitats, and affecting marginalized, indigenous, and impoverished peoples most. Her idea that we need a new term for this epochal shift- rather than Anthropocene or Capitalocene- instead goes back to "chthonic" others- spiders, pigeons, fungi, and other creatures usually relegated to the compost bins of human attention. She turns instead away from post-humanist language to com-positions, staying together with the trouble.I loved the second half of Haraway's book, as the chapters are short, full of loving craft, and bring out her ideas in novel ways that aren't usually seen in academic writing. Her last section about the Camillas is a storytelling encapsulation of the rest of her book. It's a fun read on its own, but you might need the other 7 chapters to understand what she means.

Climate change and the onset of the Anthropocene, or Cthulucene as Haraway prefers to call it, calls for new ways of being and different stories to the ones we've been telling each other. Rather than an individualistic, capital M Man story, we need earthier, more entangled stories that will guide us in tough decisions about who lives and who dies, for whom we are and are not responsible in a finite world. This is a book about avoiding two mental places that are not helpful: denial on one hand or "game over" on the other. Instead, we need to stay with this trouble, and Haraway provides a lively philosophy for doing that.

Excellent book for anyone considering how to deal with and think about our current climate crisis.

This is the first book I have read in a long time that offers a path (or really many paths) forward. It is already affecting my writing and my teaching.

I loved this book. Learned so much about eco activism and how these things are linked with other social concepts very important to me. Definitely recommend to anyone looking to learn about humans current place in the world.

This is a rarity--a book that clear-sightedly addresses the troublesome issue of climate change and general environmental degradation, yet is not relentlessly depressing. Haraway plays with words and ideas, producing a mind-bending work that pushes the reader off center. ONLY by breaking out of our current paradigm, invisible in its ubiquity, can we move forward. A wordsmith, the author does spend a lot of time on terminology, and a bit egotistically champions her own phrases, but the journey she offers is well worth the pedantry. It matter what thoughts think thoughts. It matters what words express ideas.

I bought two of these books for granddaughters after reading a glowing review in the Wall Street Journal. The reviewer recommended the story as an example of a woman who persevered to become a success. The illustrations are great and the story as well until the end. The Great Depression wiped out all the woman had achieved, leaving her bankrupt. Her husband then divorced her. In the notes at the end of the book it is noted while in her 80’s she is recognized for her work she never achieved the same recognition as her male contemporaries. Reality is fine but 5-8 year olds are a little young for this outcome. They might interpret the moral as no matter how hard you work you won’t be judged fairly. I returned the books.

In this beautiful biography, Alice emerges as a bright and intrepid, creative and resilient figure in history, without whom the modern movie would not exist. I'd highly recommend it to 8-10 year olds. Careful reading will show that details throughout Alice's movie career show up at the end in her home as she raises her children. Although her career does not turn out as she wanted, she fulfilled many of her dreams, lived a full life, and raised her family with all the fun and joy and stories and resilience that characterized herself.

Anita L. Archer, PhD, is an educational consultant to school districts on explicit instruction, the design and delivery of instruction, behavior management, and literacy instruction. She has taught elementary and middle school students and is the recipient of 10 awards honoring her excellence in teaching and contributions to the field of education. Dr. Archer has served on the faculties of San Diego State University, the University of Washington in Seattle, and the University of Oregon in Eugene. She is nationally known for her professional development activities, having presented in every state over the course of her 40-year career. Dr. Archer is coauthor of numerous curriculum materials addressing reading, writing, and study skills (with Mary Gleason), and of the book Explicit Instruction (with Charles A. Hughes). She is also author of the professional development DVDs Golden Principles of Explicit Instruction, Active Participation: Getting Them All Engaged, Elementary Level, and Active Participation: Getting Them All Engaged, Secondary Level.  Charles A. Hughes, PhD, is Professor of Special Education in the Department of Educational and School Psychology at The Pennsylvania State University and Adjunct Senior Scientist at the University of Kansas Center for Research on Learning in Lawrence. She "cuts the fluff and teaches the stuff" in an easy to use, straightforward manner. I use this book often when I am working with teachers who need quality strategies for their teacher toolbox. Highly recommend this book to all educators.

This was a rental for a grad level class. I loved this book because it teaches teachers how to teach in a scientific-proven way. It changed my perspective on teacher and how to teach.

This book is a joke with useless anecdotal stories and a complete lack of any kind of science behind it. Do not buy this book.

I found this book to be the most informative I have come across. I would highly recommend it. It is easy to read, and understand. It breaks down the information so that it is clear. It discusses types and brands, as well as how to "cost" the product you are purchasing.

Many how to books are hastily written, and the authors leave much to the reader to assume. But I found there were many practical explanations and suggestions in this one.

Taste like a piece of dried leaf that is fallen from a tree in autumn mixed with dirt. I don't think it does a damn thing.

I have back pain and am trying to find a safe alternative to the standard pain medications. Gives amounts for dosing I could not find anywhere else. Also shows differences in oils and where to find them.

In Getting to Yes the authors present, step by step, how to find your way to a win-win solution that helps meet your goals while at the same time preserving the relationship so that future negotiations also go smoothly.This book was the assigned textbook for a college course I took on negotiation, but it's one of those fairly rare cases where the material that's useful for a college course is also immensely useful for off-the-street people in a variety of situations. This book avoids complicated jargon and long, droning background chapters. Instead, it plunges into helpful information to assist people in negotiating for a new car, negotiating issues with their landlords, and all the many ways we all negotiate for our position throughout life.Negotiation isn't just for union leaders trying to avert a strike. All of us negotiate each day as we try to juggle our many roles. We negotiate with our co-workers over assignments. We negotiate with our family members over chores. In an ideal world all of those discussions would go quickly, smoothly, and with as little strife as possible.Getting to Yes provided numerous helpful examples which made their points more easy to understand. It is so true that people tend to remember stories where they might not remember dry text. When I think about this book I do remember several of the stories clearly, and those help to represent the points the authors were making. The stories help remind me to focus on the issues when negotiating and to look for objective standards to work with.The information presented is wonderful, and immediately useful in life.On the down side, this is a new version of older material. The authors chose to keep the initial book in its original form and then add on additional information at the end. I appreciate for historical reasons why they wanted to do that. However, from a fresh reader point of view, I feel they should present an integrated whole which most clearly presents the full information. The way the book is laid out currently, you have to go back and forth to find all information on a given topic.Also, the format is not laid out for easy reference. If they went more for a "dummies" style with an easy to scan layout, graphs and charts to quickly find and scan, and quick end-summaries, that would make this more useful as a reference book to keep on a shelf. Right now if I had an issue to handle it would be less than quick to grab the book and find the answer. I would have to wade through the book to figure out where to get the support I needed.Still, I do recommend that everyone read this book at least once, to build their skills in negotiation. It's something we all have to do!

I first read this in 1983, when my husband was in his first year of law school. I've remembered over the years and tried to apply some of the principles that i learned in my personal and professional life. I recently attended some professional (non-legal) training, and one of the facilitators was a lawyer who led a discussion about how to negotiate when there is disagreement. As he spoke, I recognized the principles as the same ones I'd read in Getting to Yes so long ago. At the end of his presentation, he referred to this book. I decided to buy a new copy and read it again. It has been updated, and the new material is a great addition. Still a very handy tool for personal or professional negotiation.

This book has been around for quite a while and is vaunted by many as THE book on negotiation. I, like many others, am unconvinced. If you have never negotiated anything in your life, this is the book for you. It's a great primer, but it's far from all-encompassing. The authors admit that it is not meant to cover everything, though. It teaches what's known as "principled negotiation," which is a non-adversarial style. It's particularly useful for business deals and personal conflicts, since it emphasizes mutual problem solving and de-emphasizes taking positions, thus allowing everyone to "win."On the other hand, anyone who has successfully negotiated even the most minor of deals (i.e. haggling), won't find this as useful. In order to be effective, you have to convince all parties to accept the premise of principled negotiation. If they don't the whole system falls apart. Furthermore, if you are in an adversarial proceeding (lawsuit, arbitration, etc.), this is fairly useless. In those proceedings, the other party either doesn't care whether you "win" or actively wants you to lose. If you come up against a manipulator, the practices in this book will prove to be more hindrance than help. I had to read this as part of a law school class. To put it mildly, other aspects of the class were far more useful than this book.Bottom Line: a good starting point. Just don't make it a stopping point.

The book has opened a world of opportunities that I could not see before. It is practical. Everyone can benefit by reading it. The method that the authors describe can be used for any negotiations, from small to big: settling differences in views with your colleagues, talking to your family members, not giving in when a client asks you for an unjustified discount, when your house contractor doesn't want to do the proper job, managing a hostage crisis and even negotiating a nuclear arms deal with another, perhaps narrow minded country. I wish I have read this book 20 years ago. I would have handled many critical situations differently. I highly recommend this book for everyone to read. Moreover, if you have children who are ready to fly out or recently left your nest- make them read this book because it may change their lives, in a good way.

A must read. It helps with every day negotiations. It will save you a lot of emotional grief. It will help your marriage. It will help your work relationships. It helps your remove a lot of conflict in your life and a great stepping stone to peace of mind. I wish I had read it earlier in my life.
